Vibrant Gnocchi

This gluten free and vegan gnocchi has just 4 ingredients and was so absolutely delicious that I just HAD to share my recipe with you 📝



I’ve made it several times and served with my coriander pesto - and also added veg & tofu to serve on some occasions 🥦


📎 PS: If you don’t have the superfood powders you can omit them and just make it as normal gluten free gnocchi which I have done before when testing the recipe. Personally, I wanted to add some extra nutrients to this comforting meal, and also vibrancy, with the colourful powders 🌈


INGREDIENTS:

  • 2.75-3 medium white or baking potatoes (works with both!)

  • 1.25 cups Schar universal mix it flour

  • 1/2 tsp salt

  • Blue: 1/2 tsp blue spirulina powder

  • Purple: 1/2 tsp black goji Berry powder + 1/4 tsp pink pitaya powder


METHOD:

Bring a saucepan of water to the boil and add the 3 potatoes for 30-35 mins or until a knife goes in well (no need to cut or peel)


Drain the water and soak the potatoes in cold water, peeling off the skins (they should come off super easily


With a cheesegrater (I used the side you’d usually grate cheddar with) grate the potatoes


Split the flour in half and put into two bowls and 1/4 tsp salt and blue spirulina to one bowl and 1/4 tsp salt and black goji & pink pitaya to the other. Mix thoroughly to combine before adding the potato.


When mixing the potato with the flour & salt (half in each bowl) add 3/4 of the grated potatoes first - if it’s too dry or not binding add the remaining 1/4 of the grated potatoes otherwise leave to the side [this is because potatoes vary in size]


It should be a dough that’s not too sticky and not too dry - I didn’t even need extra flour to roll out! Knead each colour for a couple of minutes


Roll each colour into 4 balls then roll into cylinders and cut into gnocchi pieces around 2cm x 5cm and then with a fork push in around each piece to give it the traditional indent




Boil in salted water until they float to the top (should only take ~2 minutes or so)




Serve with veg/tofu/pesto/tomato sauce - anything you fancy! 🍝
