Vegan rainbow bounty bars (no refined sugar)

A totally refined sugar free bounty bar recipe that's packed with a much more nutritious alternative to food colouring (superfood powders!)


๐Ÿฅ„ โฑ It's pretty spoonie friendly as only takes 10 minutes to mix up and then you just have to cover them in melted chocolate and let them set!

INGREDIENTS:


FILLING

200g desiccated shredded coconut

3/4 can full fat coconut milk (eliminate the watery part)

1 tbsp coconut oil (slightly soft but not melted)

2 tbsp maple syrup

2 tsp of each superfood powder - @unicornsuperfoods

๐Ÿ’› Tropicana blend

๐Ÿ’— Beauty blend or pink pitaya

๐Ÿ’œ Berrylicious

๐Ÿ’™ Blue Spirulina

๐Ÿค Plain - No powder

TOPPING

200g dark chocolate chips (you could melt down Raw Chocolate Company or Pure Heavenly) for totally refined sugar free)

METHOD

Mix the coconut, coconut cream, coconut oil & maple syrup in a bowl until fully combined. Split into ~5 sections and separate into bowls. Mix the 4 superfood powders into each bowl, leaving one as is. Line a tray with parchment paper and mould into bar shapes. Place them into the fridge whilst the chocolate is melting.


Over a Bain Marie style double burner (a pan of ~1 inch boiling water with a dry mixing bowl on top), melt down the chocolate chips or refined sugar free chocolate. Coat each bar in the chocolate and place onto the lined baking tray. Place the tray in the fridge for ~20 minutes until set. Store for up to a week in an airtight Tupperware and enjoy!
