Chocolate cake bites (vegan, gf + refined sugar free)

As I was recipe testing for the perfect vegan, gluten free, refined sugar free brownies I stumbled across this



It’s not the perfect gooey brownie texture that I was looking for, it’s more on the cakey side for texture with a gooey centre - a perfect chocolate cake bite recipe! Reviews in my household for this were amazing, and you voted you'd like to see the recipe for this - so here it is!

INGREDIENTS:


Dry

1 cup gf flour sifted (I use Schar Universal Mix It)

1/2 cup cacao powder sifted

1 tsp baking powder sifted

1 cup coconut sugar

Wet

3/4 cup coconut oil melted

1 tsp vanilla extract

1/2 cup aquafaba

1/4 cup oat milk

METHOD: Mix the dry ingredients in a bowl. Ensure you sift in the flour, cacao powder and baking powder. Don’t sift in the coconut sugar.



In another bowl or jug, mix the wet ingredients. Make a well in the dry ingredients and slowly mix with a hand whisk.

Don’t over mix, as soon as combined pour into a dish lined with parchment.



Bake at 180 degrees centigrade (fan oven) for 20 minutes. Remove from the oven and allow to cool for ~20-30 mins before lifting out and slicing. Enjoy!



PS. I decorated them for Halloween and they ended up looking like this (very random and was a lot harder to decorate than it looks!) but here's a glimpse of how they turned out
