Vanoffee vegan white chocolate

{Vegan, gluten free & refined sugar free}

If you haven’t tried the raw Vanoffee chocolate from The Raw Chocolate Company - it’s amazing, you must!

But it can get expensive if it’s a treat you want to have on a regular basis, so I’ve re-created their bar into one you can make from scratch

This is an ultra creamy, light, caramel, vanilla and almost ‘banoffee’ tasting ‘white’ chocolate

It’s a DIVINE flavour (that I’ve had many non-vegan people taste and love!) but I wouldn’t compare it to white chocolate per-se, it’s kinda like a category in itself…

Takes just 15-20 minutes (plus time for it to set) so it’s still relatively spoonie friendly!

Makes ~4 large bars


1.25 cups Organic Raw Cacao Butter

3/4 cup powdered lucuma (blended into a fine powder)

1/2 cup coconut sugar (blended into a fine powder)

2 tsp vanilla bean paste


In a tabletop blender or food processor, blitzz the lucuma powder until it is ultra fine and set aside. Do the same with the coconut sugar until it is super fine (don’t overblend as the motor can get hot and begin to melt the sugar).

Over a double burner (a large glass bowl on top of a pan with 1 inch of boiling water that is simmering over a low heat) melt down the cacao butter. As soon as it’s melted (you don’t want it over the heat for too long) sift in the fine lucuma powder, stir, then sift in the fine coconut sugar and the vanilla bean paste. It should be slightly thick, yet pourable. Pour into moulds of your choice and leave to set in the fridge for 20 or so minutes.

Pop out of the moulds and store for up to 3 weeks in the fridge

Because this recipe only melts the ingredients (& doesn’t actually cook them) they still keep lots of nutrients, so there are health benefits from the lucuma fruit and healthy fats and antioxidants from the cacao butter
