Tropical Bliss Balls

☀️ These mango, coconut and lime energy bites are a little taste of summer (whatever is left of it now!) 🍂



🍡Sooo tangy yet sweet, these are super simple and quick to make so are vegan, gluten free, refined sugar free AND spoonie friendly!


INGREDIENTS

- 1 cup dried mango - soaked in warm water for 10 mins then drained

- 1 cup pitted dates - soaked ^

- 1 cup cashew nuts

- Juice from 1.5 limes

- 1/4 cup desiccated coconut

- 1 tsp manuka honey (optional)

- Extra desiccated coconut and Unicorn Superfoods Tropicana blend to top



METHOD Create by combining all the ingredients in a blender or a food processor, then rolling them into balls and adding toppings ✨


🍬They store in the fridge for up to ~5 days so are great for a sweet yet healthy snack that's high in protein!
