Super Sushi

I created these colourful maki rolls using naturally coloured superfood powders blue spirulina, pink pitaya and goji berry powders. This recipe is gluten free, vegan and SO nutritious!

What I LOVE is the multitude of extra health benefits that each superfood powder brings to the meal without compromising the taste at all 🤤

This time I went simply for avocado and tofu (as I was feeling like some extra protein). You can change up what’s inside your maki rolls to whatever you have in the fridge and are feeling like eating! 🍽


  • 2 cups sushi rice

  • 4 cups water

  • 4-5 sheets sushi nori paper

  • 1 tsp pink pitaya powder (for pink)

  • 1 tsp blue spirulina powder (for blue)

  • 1 tsp black goji berry powder (for purple)

  • 5.3 tbsp rice vinegar

  • 1.3 tsp salt

  • 1.3 tbsp sugar

  • 1/2 avocado sliced thinly

  • 4 x half carrots (purple, orange, yellow & light yellow) thinly sliced

  • 1/2 beetroot thinly sliced

  • Soy sauce, wasabi and pickled ginger to serve

Boil the water and rice for ~30 minutes on a mid-low heat until water has evaporated (or check the instructions on the pack).

Spoon rice into two or three bowls with an even amount of rice in each. Heat vinegar on a low heat and mix in salt and sugar till they dissolve, then split the mixture into two/three ramekins and add the blue spirulina to one and the pink pitaya powder to another (and black goji if you want a third purple colour). Add the coloured vinegar mix to one bowl of rice each. Let the rice cool for 15+ minutes.

Lay the rice onto the nori using the back of a spoon until flat and around 1cm thick. Add your toppings, roll, then cut with a sharp knife (you will need to wash the knife regularly with each cut so that the blade is nice and sharp and not sticky).

Not only are these sushi rolls packed with colour, they are also filled with nutrients, vitamins and are super healthy;

Beetroot - manganese, potassium, iron & vitamin C

Avocado - filled with omegas and good fats

Carrots - vitamin K and beta carotene

Blue spirulina - antioxidant & anti inflammatory

Pink pitaya - fibre & immune boosting

Black goji berry - vitamin C, A and antioxidants

The powders are amazing for making it vibrant and I couldn’t notice the taste of the powder in the rolls because of sushi vinegar mix!
