Strawberries and Cream Chia Pudding



🍓It's strawberry season in the UK and the 'traditional' dessert is, of course, strawberries and cream 😝

My creation is a healthier twist on this:

⚡️using maple syrup instead of white sugar

⚡️using chia seeds for added protein


Chia seeds contain large amounts of fiber and omega-3 fatty acids, plenty of high quality protein, and several essential minerals and antioxidants (info from Healthline)


This pudding uses oat cream which makes it decadent, creamy and incredibly delicious 🤤


⏲🥄It's spoonie (chronic illness) friendly as it only takes 5 minutes to prepare!


Serves 2-3

INGREDIENTS:

1 cup fresh strawberries diced and squashed slightly

1 cup oat cream

1/4 cup oat milk

1/2 cup chia seeds

3-4 tbsp maple syrup [or to taste]

Pinch of salt

[Optional] oat yoghurt and extra sliced strawberries to serve


METHOD:

  1. Mix the chia seeds, oat milk and oat cream in a bowl

  2. Dice the strawberries, pour them into the bowl and squash them slightly with a fork as you mix

  3. Add the maple syrup and salt

  4. Allow to soak for 10-20 minutes [the older the chia seeds the longer it may need]

  5. Serve in a glass jar, with [optional] a layer of oat yoghurt, followed by the chia pudding and top with fresh sliced strawberries

  6. Store in the fridge for up to 3 days
