Seedful gluten & yeast free loaf

This recipe is inspired by Seedful bread and is an alteration of My New Roots ‘Life Changing Loaf’ recipe


It’s gluten free, vegan, yeast free, pure grain & seed bread that is packed with protein, omega oils and fibre and just one slice keeps me full for hours



DRY INGREDIENTS:

  • 1 cup sunflower seeds

  • ½ cup golden flax seeds

  • ½ cup pumpkin seeds

  • 1 cup rolled oats

  • 1/2 cup steel cut oats

  • 2 tbsp chia seeds

  • 4 tbsp psyllium seed husks

  • 1 tbsp salt


WET INGREDIENTS:

  • 1.25 tbsp maple syrup

  • 1.5 tbsp melted coconut oil

  • 2.5 tbsp olive oil

  • 1 1/4 cups water


METHOD:

Mix all the dry ingredients in a bowl

Mix the melted coconut oil in a separate bowl with the water, olive oil and maple syrup

Stir the wet ingredients into the dry ingredients and pour into a lined loaf tin.

Leave to set for 2 hours (important!) then preheat the oven to 170 degrees centigrade and bake for 30 minutes.





Remove from the oven and tip the loaf upside down onto the rack and pull off the loaf pan and baking paper. Then put back into the oven to back for another 45 minutes to 1 hour - until the outside is golden and it sounds hollow to tap. I’ve underbaked this a few times and I think it’s better to bake it for a little longer as the inside can sometimes be wet inside otherwise still. If your loaf tin is flatter & longer than in the images, it may need only 40 minutes once upside down so do check on it for a hollow sound!


Once cooled completely, you can slice it (toast it if you like) and top with anything you would put on toast! My faves are avocado / cashew butter and salt / homemade chia jam / vegan cream cheese, tofu and nutritional yeast

This bread is a HUGE win particularly if you’re sensitive to or avoiding yeast products
