{Salted} Caramel Protein Bliss Balls

Vegan, gluten free, refined sugar free and packed with protein & superfoods

Ready in minutes and using just 4 ingredients!

Ultra gooey and caramel'y - these bliss balls taste almost like fudge!

These are made using a plant based protein powder that is totally refined sugar free and contains pea & rice protein and superfoods that have many health benefits like lucuma and maca.

I find that eating foods high in protein helps manage my chronic fatigue symptoms, so these are my new go-to snack, especially during that mid-afternoon crash

1 cup raw, unsalted cashew nuts

1 cup medjool dates (11 dates) (soaked in boiling water for 1-2 mins, then drained)

4 heaped tbsps of Unicorn Superfoods caramel slice protein powder

1 tsp vanilla extract

Optional - sea salt flakes

Makes 14

Soak the medjool dates in a bowl filled with kettle boiled water for 1-2 minutes, then drain. This is useful to rinse them and also helps them get super stretchy and like caramel/fudge. In a food processor, pulse the cashews for ~30 seconds until slightly broken down (this is important to get a smoother final texture). Add the dates and blend until it starts to stick to the sides of the blender slightly. Add the vanilla extract and protein powder. Blend again until smooth and doughey and it forms a ball

Roll into balls (approx 14) and sprinkle some with sea salt flakes if you want some of them salted caramel! Enjoy!

Store in an airtight container in the fridge for up to 3 days or freeze (defrost the night before in the fridge) and eat within a month.
