Roasted honey maple carrots

These honey maple roasted carrots are one of my easy one tray recipes that you just pop in the oven and bake
Save this one for when you next make a roast dinner
I'm going to be sharing lots of simple oven roasted recipes that take longer to roast but are ultra easy to prepare

This recipe is plant based but if you're fully vegan just sub the honey for an extra tablespoon of maple syrup
INGREDIENTS: ~750g bag carrots
1 tbsp honey
1 tbsp maple syrup
2 tbsps olive oil
2 tbsps apple cider vinegar
1/4 tsp salt
1/8 tsp black pepper
[optional thyme to garnish]
METHOD
Preheat the oven to 180°C (fan)
Wash the carrots
Cut off the tops and slice the carrots in half or leave them whole if they're particularly small (I like to leave the skins on for speed and preference but peel them if you prefer)
Place them in a baking tray lined with parchment paper
Mix together the ingredients for the sauce in a small bowl or jug
Pour over the carrots and mix to cover them fully in the dressing
Roast for ~35-45 minutes until tender inside and slightly caramelised
Serve immediately alongside your roast dinner or enjoy them by themselves!
