Quick & Simple Shortbread
Vegan, gluten free and refined sugar free shortbread biscuits

Ready in just 15 minutes using just FIVE ingredients
This recipe is super simple; combining the ingredients in a bowl, flattening the dough into a slab, slicing into biscuits then pricking some holes.
INGREDIENTS:
3 cups oat flour [gluten free if GF]
1/2 tsp salt
1/2 cup melted coconut oil
6 tbsp maple syrup
1 tsp vanilla extract
METHOD
Preheat the oven to 180°C (fan)
In a bowl combine 3 cups oat flour and 1/2 tsp salt
Make a well in the centre and add 1/2 cup melted coconut oil, 6 tbsps maple syrup and 1 tsp vanilla extract into the centre
Mix it with a fork, starting with the wet centre first and combining till fully mixed
Knead into a ball
On a tray lined with baking parchment, press into a square
Slice into biscuits and separate on the tray
Poke holes with a skewer / matchstick end / fork
Bake at 180°C (fan) for 9-10 minutes or until ever so slightly golden
Store in an airtight container for around 3-5 days
