Plant Based Mac & Cheese

Just one pot, ultra comforting and ready in under 15 minutes


I’ve been making this creamy plant based pasta for years now


It is sooo simple and never disappoints. If you want to add veggies (which I often do) then add them to the pot of boiling pasta when there’s ~5 minutes of cooking time left



INGREDIENTS:

2 cups {GF} pasta (serves ~2)

1 cup plant based grated cheese

2-3 heaped tbsps vegan cream cheese

1/3 cup nutritional yeast

Salt and pepper to taste

{amend the quantities accordingly for more or less pasta}


METHOD: Boil your pasta, drain and return to the pan. Add plant based grated cheese, cream cheese and nutritional yeast. Over a low heat melt it until creamy. Pour into bowls and top with nutritional yeast, salt and pepper


PS. You can bake it in the oven with extra cheese on top if you have the energy to wait and wash up the additional dish - I never really do though, but it's delicious as is!
