Piña Colada Smoothie Bowl

A super quick and simple classic “Piña Colada” smoothie recipe; sweet pineapple flavours with creamy coconut, tangy lime and honey/agave


Like all of my recipes; this recipe is vegan, gluten free & refined sugar free


Due to my recent diagnosis and change in diet, I’m working on creating recipes that are more ‘gastroparesis’ friendly; in that they’re liquid or pureed

This recipe takes just 5 minutes to make, and so is ‘spoonie’ (chronic illness) friendly


Using frozen fruit with a high speed blender creates a ‘sorbet-like’ smoothie bowl texture. But if you don’t have a high speed blender simply thaw the frozen fruit slightly and add more liquid until it blends well




INGREDIENTS:

4 cups frozen pineapple

3/4 cup evaporated coconut milk or regular coconut milk

2 tbsp fresh lime (juice from approx 1 lime)

1 tbsp honey or agave (or more to taste) (I use Steens Manuka Honey - use affiliate code positivelychronictravels20 for 20% off)


Notes:

*if you don't have a high speed blender add more milk, closer to 1 cup or even more to enable it to blend

*add more honey to taste especially if using regular coconut milk

*if you like your smoothies drinkable just add extra liquid and serve in a glass



METHOD

  1. Add all the ingredients to a high speed blender (over 2000W) and combine until smooth

  2. Serve in a bowl and (optional) top with extra pineapple and coconut flakes
