Molten Lava Brownie Bites

Indulgent, fudgey, gooey chocolate brownies with a melted chocolate centre, with the crisp, crunchier outside that you get on the corner pieces of a batch of brownies

This decadent creation is vegan, gluten free and even refined sugar free

Contrary to regular brownies, because they’re individual “bites” they bake in just 12 minutes! The full recipe can be prepared and baked within 30 minutes, so it’s nice and spoonie friendly

They are perfect for hosting guests at bbq’s or dinner parties. Enjoy them fresh out the oven for a mouth watering melted centre!


  • 2 flax eggs (2 tbsp flaxseed with 6 tbsp Oatly Barista milk)

  • 1 cup chopped dark chocolate 70% (1.5 x 90g bars chocolate) [use raw chocolate company or pure heavenly for refined sugar free]

  • 1 cup coconut sugar

  • 1/3 cup slightly softened coconut oil

  • 1 tsp vanilla extract

  • 3/4 cup gluten-free 1:1 flour (I used Schar Universal Mix It)

  • 1 tsp fine sea salt

  • 3/4 tsp baking powder

  • 1/4 tsp bicarbonate of soda

  • 3 tbsps cocoa powder

  • 1/4 cup chocolate chips

  • Extra dark chocolate (~12+ squares/1/2 bar chocolate) - [total for recipe is 2 x 90g bars dark chocolate]

  • Plant based butter (to line muffin trays)


  1. Preheat the oven to 180°C and coat two muffin trays (12 cups) with plant based butter

  2. Mix the flaxseed with the oat milk

  3. Melt the dark chocolate over a Bain Marie style double burner

  4. In a separate jug or bowl, using a spoon, cream the coconut sugar with the coconut oil and vanilla extract

  5. Pour the jug into the dark chocolate and fold together briefly with a spoon till combined

  6. Then fold in the flax egg. Don’t overmix and simply stir the ingredients until just combined

  7. Gently stir in the dry ingredients; flour, baking powder, bicarbonate of soda, salt and cocoa powder (again, ensuring that you don’t overmix)

  8. Fold in the chocolate chips

  9. Pour ~1 tbsp batter into each cup to fill the base. Use two teaspoons to spoon it in

  10. Press ~1 square of dark chocolate into the centre of each brownie. Optional, cover in more batter or leave the molten tops exposed.

  11. Bake for ~12 minutes

  12. Sprinkle with salt (optional) and enjoy immediately
