Easy Papaya Boats
Papaya boats are the perfect summer breakfast and snack. Essentially, the concept is to use the papaya as your 'bowl', so you can “eat” into your bowl until it reaches the skin!
Papaya has many health benefits including high fibre, lycopene, papain (which can aid digestion of protein), vitamin C, K and many antioxidants.

An ultra spoonie (chronic illness) friendly recipe, that’s packed with nourishing fruits and yoghurt


INGREDIENTS:
1 large papaya (or a few smaller papayas)
Fresh Fruit (of your choosing!)
I chose; blueberries, strawberries, raspberries, banana, passion fruit
Plain or flavoured yoghurt
Any dairy or plant based yoghurt. (I chose Coconut Collab mango & passionfruit)
Honey or Agave (optional)
METHOD:
Slice your papaya lengthways
Scoop out the seeds and stringy parts in the centre
Add the yoghurt into each half [~3/4 - 1 cup depending on the size of your papaya]
Top with sliced fruit. You can use any fruits you like. You may also want to add granola or seeds
Drizzle with honey/agave/maple syrup
Serve immediately!
