Easy homemade granola

This delicious plant based, gluten free granola recipe is super easy to make!


With seeds and cashew nuts, it's pretty high in protein. It's slightly chewy yet perfectly crispy and crunchy!

You simply mix the all the ingredients in a bowl, lay in a slab shape on baking parchment, bake for ~40 minutes, breaking into clusters after ~25min


INGREDIENTS:

Dry

10 tbsp rolled oats

2 tbsp oat flour

2 tbsp flax seeds

2 tbsp chia seeds

1 tbsp slightly crushed raw cashew nuts (or other crushed nuts)

Pinch salt (~1/8th tsp salt)


Wet

4 tbsp warm water

3 tbsp coconut oil

2 tbsp honey / manuka honey

(I used Steens Manuka Honey - affiliate code positivelychronictravels20 for 20% off)

1 tbsp maple syrup

1 tbsp smooth cashew butter (or other nut butter)


METHOD:

Simply combine the dry ingredients, mix together the wet then add it to the dry


Lay in a slab shape on a sheet of parchment paper


Bake for ~35-40 mins at 145°C (fan). After 20 minutes, break it up into clusters and return to the oven for another 15-20 minutes until slightly golden. It will be soft when it comes out the oven but will harden when it’s cooled and be slightly chewy but crunchy. Store in an airtight container for 3-5 days.
