Choc chip cookies

🍪 Refined sugar free, vegan & gluten free cookies 🍪


A guilt free chocolate chip cookie that's still slightly gooey inside, only takes 10 mins to prep and 8-11 mins to bake!



MAKES ~12


INGREDIENTS:


DRY:

2 1/2 cups plain flour or for GF use @scharglutenfree mix it universal flour (GF version is slightly more crumbly than if using plain flour)

1 tsp bicarbonate of soda

1 tsp baking powder

1/2 tsp salt


WET:

2/3 cup coconut oil, melted

1 1/3 cups coconut sugar (if you're not refined sugar free, it works well with 2/3 cup granulated sugar and 2/3 cup brown sugar)

1/2 cup oat milk

2 tsp vanilla extract


ADDITIONAL:

1-1.5 cups vegan Galaxy chocolate / chocolate chips / Pure Heavenly for refined sugar free


METHOD:

Mix the flour, bicarbonate of soda and baking powder and salt in a bowl. Then in a separate bowl or jug, whisk together the coconut oil, coconut sugar, oat milk, vanilla extract until combined. Then cream the wet ingredients into the dry. Once fully combined stir in the chocolate chips / chunks. Roll into ~12 balls the size of a golf ball and slightly squash (as shown in image).


Bake at 170 degrees centigrade for 8-11 minutes (until slightly golden).


IMPORTANT- once out, immediately with a flat spatula, press down on each cookie, this will make them ultra gooey inside and really affects the texture - they won't be so gooey if you don't do this.


Let them cool for ~15-20 minutes then enjoy!


Store in a Tupperware for 3-5 days.
