Cashew Satay Dressing

A creamy satay dressing that’s a great substitute for those who are allergic to peanuts (but can still tolerate cashew nuts!)


Ready within minutes - just combine the ingredients in a bowl or jug!


Amazing on a salad, over a buddha bowl, or added to a stir fry - it’s super multi-purpose


INGREDIENTS

3 tbsp extra virgin olive oil (or 2 tbsp olive oil 1 tbsp water)

4 tbsp soy sauce (use tamari soy sauce for gluten free)

2 heaped tbsp smooth cashew butter

1.5 to 2.5 tbsp clear runny honey (to taste, I usually add 1.5 and at the end add extra)

Juice from 1/2 lime


Mix the cashew butter, olive oil and honey a bowl or mixing jug (you may want to use a hand whisk to help combine the ingredients). Then add the soy sauce. When they’re fully mixed, add the juice from 1/2 lime (don’t add this earlier as it could curdle the ingredients).



Serve on your salad, buddha bowl, as a dipping sauce for summer rolls or add it to a stir fry!
