Carrot, Ginger & Lemongrass Soup
I've recently been diagnosed with Gastroparesis (delayed gastric emptying) so I've been busy in the kitchen experimenting with recipes that are more suitable for my flare ups. Generally, liquid foods are tolerated better and are a good way to still include nutrients. This carrot soup contains a delicious and nourishing kick + digestive aid from the ginger and a zesty tang from lemongrass
It's vegan, gluten free, low FODMAP AND free from ONION & GARLIC (a common rarity with soups!)
This soup is made in ONE POT (less washing up 🧼) is quick and easy and ready in under 20 minutes
INGREDIENTS:
2 x vegetable stock cubes (onion and garlic free)
500 ml water
~750g carrots - peeled and sliced
2 tbsp peeled and diced fresh ginger
1 tsp chopped dried lemongrass
1 tbsp + 1 tsp lemon juice
1 tbsp maple syrup
1 tsp sea salt
1/4 cup coconut milk (plus more to top)
(Optional: coriander or parsley to garnish)

SERVES 2-3
METHOD
Bring water to the boil in a medium-large saucepan over the hob
Add 2 stock cubes, fresh ginger, lemongrass and salt
Peel (optional) and then slice the carrots and add them to the pan, bring to a simmer
Simmer for ~15 minutes or until the carrots are soft/break up when pressed
Remove from the heat and add the fresh lemon juice, maple syrup and coconut milk
Pour into a tabletop blender (or using a stick blender leaving it in the pan) and blend until smooth
Serve immediately and top with more coconut milk and (optional) fresh coriander
