Berry Chia Crumble Bars

These crumble bars are a delicious cross between a cereal bar, and traditional fruit crumble
If you’re anything like me and love the crumble topping in a traditional crumble, but always mainly eat the crumble part and only a bit of the fruit, then you’ll love this recipe
An oat crumble base, with a strawberry and raspberry chia jam centre and an oat crumble topping, these bars are the perfect snack or dessert
Completely refined sugar free, vegan and gluten free and ready within 30 minutes
Strawberry & Raspberry Chia Jam
INGREDIENTS
1 cup frozen raspberries
2 cups frozen strawberries
2 tbsp maple syrup
2 tbsp cornstarch
3 tbsp chia seeds
1.5 tbsp lemon juice
METHOD
Remove the frozen fruit from the freezer
Place the strawberries and raspberries in a jug and pour boiling water over them.
Let it soak for a few minutes, then drain the excess water by pouring them into a sieve.
Repeat this until mostly thawed.
Place the berries back into the sieve and press down on the berries to strain out excess liquid, breaking up the strawberries as you go
In a bowl, mix the mashed berries with the chia seeds, cornstarch, maple syrup and lemon juice
Set aside for ~10-20 mins whilst you mix up and parbake the base (instructions below)
Oat crumble base & topping
INGREDIENTS:
Wet
¾ cup coconut sugar
1 cup rolled oats
1/2 cup oat flour
1/2 cup gluten free 1-1 flour (I use Schar Universal Mix it)
½ tsp baking powder
1/4 tsp salt
Dry
1 tsp vanilla extract
1/2 cup melted coconut oil
2 tbsp maple syrup
METHOD
Preheat the oven to 180°C (fan)
Mix the dry ingredients together in a large mixing bowl
In a separate bowl or jug mix the wet ingredients
Make a well in the centre of the dry ingredients and pour in the wet ingredients, mixing with a fork in the centre first, then moving outwards until fully combined
With around 3/4 of the mixture (leaving around 1/4 in the bowl still), flatten to cover the base of a square dish lined with baking parchment ~20cm
Bake this base for 10 minutes
Remove from the oven and allow to cool for a few minutes
Cover the base in the jam
Sprinkle the crumble topping over the jam
Return to the oven and bake for ~20 minutes or until the crumble begins to appear slightly golden
Allow to cool fully (important!) before slicing into bars
Store in an airtight container for ~3 days
