Beach Breeze Smoothie Bowl

I’m missing the sand and sea SO much at the moment - so I thought I’d recreate it into a smoothie bowl!

This recipe is inspired by @tropicalkohlipe - who had a smoothie called ‘Beach Breeze’ on their menu that we would order daily. Theirs had banana but as I'm allergic to banana I'd always ask them to remove it and it tasted so much better like that!

I made it a few times and finally found the perfect quantities that came out tasting super similar to theirs and really took me back to dreamy beach days on Koh Lipe Island in Thailand.

I created my own unique spin on it by adding @wearesuperu blue spirulina powder to some coconut milk, honey, dates and lime to create the ‘ocean’ part.

Beach Breeze Smoothie Bowl

Serves 2

2 cups frozen mango

2 cups frozen pineapple

Juice from 1 lime

1.75 tbsp honey

1 can coconut milk (optional: frozen in ice cube moulds)

1 tsp blue spirulina powder

2 dates

Extra fruit of your choice for toppings

In a high speed blender, blend the frozen mango, frozen pineapple, 1.25 tbsp honey, juice from 3/4 lime and 1/2 can coconut milk. For a super thick sorbet-like consistency use only 1/4 cup coconut milk.

Pour the smoothie into a bowl & give the blender a quick rinse.

In the smoothie jug, now add the remaining 1/2 can coconut milk, 1/4 lime, 0.5 tbsp honey, 1 tsp blue spirulina powder and 2 dates and blend until smooth.

Pour the blue blend onto one side of the smoothie bowl, create a marbling effect with the back of a spoon, add and fruits of your choice for toppings, and enjoy!

A perfect combination of tropical, sweet & tangy and with loads of added vitamins from the blue spirulina part of the bowl.

Looks like a beach in a bowl.
