5 min Plant Based Nourish Bowl
🍽 This is one of my staple simple recipes that I’ve been making for YEARSSS. This buddha bowl is packed with 8 colourful vegetables, all with different beneficial nutritional properties!
🥄It’s spoonie friendly, so in 5 minutes you get a rapid meal that’s super healthy and anti-inflammatory
🔄You can amend this recipe to suit dietary requirements; add more or sub for different veggies if you prefer; but all in one pot so there’s minimal washing up (always a spoonie essential!) 🧼
INGREDIENTS:
Bowl Handful green beans
Handful broccoli
Handful asparagus
1/2 cup edamame
1 avocado
Canned sweetcorn
Vacuum packed cooked beetroot
Fresh baby spinach
Fresh nuts/seeds
French Dressing
3 tbsp olive oil
1 tbsp runny honey
1 tbsp apple cider vinegar
1 tsp dijon mustard
Pinch black pepper
METHOD:
In a saucepan of boiling water, boil the green beans, broccoli, asparagus) in water for 4 minutes, then add edamame for the last minute and sieve around ~5 mins.
Whilst they’re boiling, you add the other veggies to your bowl; slice the beetroot and avocado and add the canned sweetcorn & fresh baby spinach. Sieve the vegetables and separate them with tongs (if you want it to look aesthetic!). Top with seeds/nuts of your choice and a dressing of your choice. To make my homemade french dressing mix all ingredients in a bowl.
Tip: wash up the saucepan as soon as you sieve the vegetables so that you don't have to move for a while after you've eaten
